Lentil and Tomato Soup

A hearty, warming soup with red lentils, tomatoes, and warming spices. Simple, nutritious, and comforting.

Ingredients

200 g
red lentils
2 tbsp
olive oil
1 item
onion, diced
2 item
garlic cloves, minced
400 g
canned chopped tomatoes
1 tsp
ground cumin
1 tsp
paprika
600 ml
vegetable stock
10 g
fresh coriander, chopped
salt and black pepper

Method

Heat the olive oil in a large pot. Add the onion and cook until soft, about 5 minutes. Add the garlic and cook for another minute.

Add the lentils, tomatoes, cumin, and paprika. Stir to combine.

Pour in the stock and bring to a boil. Reduce heat and simmer for 20-25 minutes until the lentils are tender.

Season with salt and pepper. Serve hot, garnished with fresh coriander.
