Spinach and Feta Pastries

Flaky pastry parcels filled with spinach, feta cheese, and herbs. Perfect for a light lunch or snack.

Ingredients

400 g
frozen spinach, thawed and squeezed dry
200 g
feta cheese, crumbled
2 item
eggs, beaten
20 g
fresh dill, chopped
1 item
onion, finely chopped
320 g
puff pastry
1 item
egg, beaten, for glazing
salt and black pepper

Method

Preheat the oven to 200°C/400°F.

Mix the spinach, feta, beaten eggs, dill, and onion. Season with salt and pepper.

Roll out the pastry and cut into 8 squares. Place a spoonful of filling in the center of each square.

Fold the corners to the center and seal. Brush with beaten egg.

Bake for 20-25 minutes until golden and puffed. Serve warm.
