Roasted Sweet Potatoes with Yogurt

Sweet, caramelized roasted sweet potatoes served with a cooling yogurt sauce and fresh herbs.

Ingredients

800 g
sweet potatoes, cut into wedges
3 tbsp
olive oil
1 tsp
ground cumin
200 g
Greek yogurt
1 tbsp
lemon juice
10 g
fresh coriander, chopped
salt and black pepper

Method

Preheat the oven to 200°C/400°F.

Toss the sweet potato wedges with olive oil, cumin, salt, and pepper. Spread on a baking tray.

Roast for 30-35 minutes, turning halfway, until tender and caramelized.

Mix the yogurt with lemon juice and season with salt.

Serve the roasted sweet potatoes with the yogurt sauce and scatter with fresh coriander.
