Tomato and Pomegranate Salad

A vibrant salad combining sweet tomatoes with tart pomegranate seeds, fresh herbs, and a zesty dressing.

Ingredients

600 g
cherry tomatoes, halved
1 item
pomegranate, seeds only
20 g
fresh mint leaves
20 g
fresh basil leaves
3 tbsp
olive oil
1 tbsp
pomegranate molasses
salt and black pepper

Method

Place the halved cherry tomatoes in a large bowl. Add the pomegranate seeds.

Tear the mint and basil leaves and add to the bowl.

Whisk together the olive oil, pomegranate molasses, salt, and pepper.

Drizzle the dressing over the salad and gently toss. Serve immediately.
