Spiced Chickpeas and Fresh Vegetables

A hearty, protein-rich dish of spiced chickpeas served with fresh, crisp vegetables and a tangy yogurt dressing.

Fresh cooking ingredients including chickpeas, tomatoes, eggplants, garlic, and herbs, with a pan of sautéed chickpeas.

Ingredients

400 g
canned chickpeas, drained and rinsed
2 tbsp
olive oil
1 tsp
ground cumin
1 tsp
ground coriander
0.5 tsp
turmeric
2 item
carrots, julienned
1 item
cucumber, diced
200 g
Greek yogurt
1 tbsp
lemon juice
salt and black pepper

Method

Heat the olive oil in a large pan over medium heat. Add the chickpeas and spices (cumin, coriander, turmeric) and cook for 5 minutes, stirring occasionally.

Season with salt and pepper and continue cooking for another 5 minutes until the chickpeas are golden and fragrant.

Mix the yogurt with lemon juice, salt, and pepper to make the dressing.

Serve the warm chickpeas with the fresh vegetables and drizzle with the yogurt dressing.
