Herby Rice with Fried Eggs

Fragrant basmati rice cooked with herbs and spices, topped with perfectly fried eggs. A simple but satisfying meal.

Ingredients

300 g
basmati rice
2 tbsp
olive oil
1 item
onion, finely chopped
2 item
garlic cloves, minced
1 tsp
ground turmeric
30 g
fresh dill, chopped
30 g
fresh parsley, chopped
4 item
eggs
salt and black pepper

Method

Rinse the rice until the water runs clear. Cook according to package instructions until tender.

Heat 1 tablespoon of olive oil in a pan. Add the onion and cook until soft, about 5 minutes. Add the garlic and turmeric and cook for another minute.

Stir the cooked rice into the pan with the herbs. Season with salt and pepper.

In a separate pan, fry the eggs in the remaining olive oil until the whites are set but the yolks are still runny.

Serve the herby rice topped with the fried eggs.
